Easy to make Oat Bran Muffins

Oat Bran Muffins

Ingredients:

  • 1 1/2 cups organic oat bran
  • 1/2 cup whole wheat flour (or all-purpose flour)
  • 1/4 cup brown sugar (or coconut sugar)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup
  • 2 tbsp olive oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup raisins, chopped nuts, or any dried fruit (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  2. Combine the dry ingredients: In a large bowl, mix the oat bran, flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Mix the wet ingredients: In a separate bowl, whisk the egg, applesauce (or mashed banana), milk, honey (or maple syrup), oil, and vanilla extract until well combined.
  4. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined. If you’re adding raisins, nuts, or dried fruit, fold them in at this stage.
